Introduction by Auguste Escoffier and Phileas Gilbert. The classic encyclopedia of gastronomy, with information on techniques, processes, table service and diet. A very big book, weighing in at about 5 pounds 8 ounces! This copy is a book club edition, identified by the faint blind stamp impression mark of a small square on the back cover board. The dust jacket has been protected with a clear, removable cover. Jacket has some edge wear, a chip at the head of the spine of about 1" X 1/2", and a rubbing wear spot to the bottom portion of the back panel of about 3/4" X 1-1/2". Dark blue cloth covered hard cover boards. There is an abrasion mark to the left side of the cover, about the size of a raisin - see photos, minor amount of edge wear. Sewn binding is tight and square. Edges of the text block are clean. No writing on the text pages, no former ownership marks. This is not a library discard copy.
